Tag's Bakery first opened in 1937. The original owner used his fathers initials for good luck, naming the bakery Tag's for Thomas Albert Gorham. After a year, he sold the bakery to the Gebhardt family who operated it from 1938 to 1968. Don and Jan Vetter bought it in 1968 and have now passed it on to their children Greg and Gretchen. The bakery is still operating as a family business.

The bakery has expanded since 1968 from its original 1200 square foot operation to the present 3800 square foot space. Through the changes and expansion, the bakery has always maintained its high level of quality and still is primarily a handcraft shop producing fresh product daily. Each year there are fewer full line retail bakeries still operating. The present labor market makes it difficult to find the type of employee willing to show the dedication that is neccessary in this kind of business. Tag's has been fortunate for many years to have a dependable and competent staff to sell and bake. As long as we can continue in this manner, Tag's Bakery will be here to serve you.

Fat Tuesday, February 5th, is Paczki Day. And what is a Pazcki? Well not just another donut. In Polish Paczki means "Little Package" - a little package of good things to eat. Paczkis are made with an extra rich yeast dough which was originally intended to use up eggs, butter, and other rich ingredients which were forbidden during the Lenten Fast. Round and sugar coated, or iced, filled with various fruits, these Polish pastries were served annually on the Tuesday before Ash Wednesday.

Many Christian cultures followed the tradition of using up rich ingredients on the last day before Lent, but the Paczki has become one of the best known Fat Tuesday treats.

Ours are filled with apricot, blueberry, cheese, custard, lemon, raspberry and strawberry.

Another popular Fat Tuesday pastry is the King Cake. Although most notably associated with Mardi Gras festivities in the U.S., King Cake is used widely in Latin and European cultures around the world.

The King Cake "Season" actually starts on January 6th, the Feast of Epiphany, or "Little Christmas" and symblolizes the visit of the 3 Kings to the Christ child. A special gift is baked inside the cake. Different cultures put various gifts inside their cakes, but most commonly, in this country, a plastic baby is used. The person who receives the gift in their slice of cake is said to have good luck in the coming year.

Traditionally, King Cake is a braided oval or ring shaped coffee cake. The cake is decorated with sugar tinted in the "official" Mardi Gras colors - gold to represent power, green to represent faith and purple to represent justice.
